The NVQ Level 2 Diploma in Professional Cookery qualification is designed to meet the needs of candidates who want to work as professional chefs within the hospitality and catering sector. It provides a basis for understanding different aspects of the sector in relation to individual roles and the industry as a whole.

Course description

This course will give you the practical skills that you need to work in a professional kitchen. It will cover all the basic cooking techniques needed as well as current industry practices and principles of cooking. You'll learn to prepare and cook a range of dishes, including stocks, soups and sauces, fruit and vegetables, meat and fish and more.

On successful completion of the course, you will be able to progress to Level 3 Professional Cookery.

All equipment, materials and ingredients are provided, but you will need to buy a knife set and protective clothing.

Enrichment activities

A range of enrichment activities are incorporated within the programme. Examples of enrichment activities include lectures by guest speakers from multinational hospitality chains and experienced chefs and visits to various industry leaders.

You will have an opportunity to participate in internal and external events where you will be able to showcase your skills.

I-Learning sessions

This is additional time embedded in your programme for your study to promote independent learning. This time is used to work through assignments, complete homework activities and conduct wider reading and research.

Personal Learning Plan sessions

A course tutor will be allocated to you on the programme. Your course tutor will be working with you to set realistic targets that will enable you to achieve your goals. Your targets will be monitored weekly by your tutor and yourself and actions plans and support put in place to assist you in achieving your targets.

Entry requirements

  • 4 GCSE grade D including English and Maths
  • Professional Cookery NVQ Diploma Level 1 (including English and Maths)


This qualification could lead to jobs such as kitchen assistant, chef or commis chef.

If you want to undertake further study, this qualification can lead to Level 3 Diploma in Hospitality Supervision and Leadership or Level 3 Diploma in Professional Cookery.

Fees and funding

The course fee for adults is £150 (plus exam fee £105).
