This course is aimed at students who wish to develop their existing skills to produce, prepare and cook a wide range of complex dishes to the standard expected by the more prestigious sectors of the industry.

Level 3 is ideal if you've worked in a professional kitchen, or have a Level 2 qualification.

Course description

On this course, you will learn and develop the following skills.

  • Develop productive working relationships with colleagues
  • Maintain the health, hygiene, safety and security of the working environment
  • Maintain food safety when preparing, storing and cooking food
  • Prepare fish for complex dishes
  • Prepare meat for complex dishes
  • Prepare poultry for complex dishes
  • Cook and finish complex fish dishes
  • Cook and finish complex meat dishes
  • Cook and finish complex poultry dishes
  • Cook and finish complex vegetable dishes
  • Prepare and cook complex sauces
  • Prepare, cook and finish complex soups
  • Prepare, cook and finish fresh pasta dishes
  • Prepare, finish and present canapés and cocktail products

Entry requirements

You will need a Level 2 qualification in cookery and relevant industry experience.


This qualification could lead to jobs such as chef de partie, sous chef or head chef or you can progress to a level 4 qualification.

Fees and funding

This course is free for students aged 16-18.

The course fee for adults is £5421 plus an exam fee £150. You may be eligible for an Advanced learner loan £5421 and exam fee £150.
